Its rich in protein and fibers and is easy to digest. Freekeh is an ancient cereal food that is popular in the Middle East and south Lebanon and gaining nowadays more popularity.
Qawarma is a traditional Lebanese pantry made from minced lamb meat. Our locally bred Awassi sheep graze freely in the wild oak forests of Adonis Valley feeding mainly on acorns. The villagers cook and preserve the minced meat in its own fat, pour it hot in glass jars and then store it in a cool place for the winter.
